Chorizo Chicken Stuffed Peppers

INGREDIENTS

  • 1 lb ground chicken

  • 4 large bell peppers, cut in half and seeded

  • 1 can Rotel tomatoes

  • 1 c jasmine rice

  • 2 tbsp Cotija cheese

  • 1 tsp cayenne powder

  • 1 tsp garlic powder

  • 1 tsp ancho chili powder

  • 1 tsp chili powder

  • 1 tsp dried cilantro

  • 1 tsp paprika

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp Mexican oregano

  • 1 bay leaf

  • 1 tbsp olive oil

PREPARATION

  1. Preheat oven to 425 F.

  2. Add all seasonings to ground chicken and let marinate for 15 minutes.

  3. Preheat saute pan on medium-high heat and add olive oil.

  4. Remove bay leaf from chicken and then add chicken to pan.

  5. Let chicken cook until crispy, around 8 minutes.

  6. Add Rotel tomatoes, rice, and 1 tbsp of Cotija cheese.

  7. Stir together then spoon mixture evenly among peppers.

  8. Bake in oven for 15 minutes, then top with remaining Cotija once cooked.

  9. Sprinkle on dried cilantro.
