Chorizo Chicken Stuffed Peppers

INGREDIENTS
1 lb ground chicken
4 large bell peppers, cut in half and seeded
1 can Rotel tomatoes
1 c jasmine rice
2 tbsp Cotija cheese
1 tsp cayenne powder
1 tsp garlic powder
1 tsp ancho chili powder
1 tsp chili powder
1 tsp dried cilantro
1 tsp paprika
1 tsp salt
1 tsp pepper
1 tsp Mexican oregano
1 bay leaf
1 tbsp olive oil
PREPARATION
Preheat oven to 425 F.
Add all seasonings to ground chicken and let marinate for 15 minutes.
Preheat saute pan on medium-high heat and add olive oil.
Remove bay leaf from chicken and then add chicken to pan.
Let chicken cook until crispy, around 8 minutes.
Add Rotel tomatoes, rice, and 1 tbsp of Cotija cheese.
Stir together then spoon mixture evenly among peppers.
Bake in oven for 15 minutes, then top with remaining Cotija once cooked.
Sprinkle on dried cilantro.
