Chicken Nachos

Nachos have always been a favorite of mine! This nacho recipe is not only easy to make, but healthy for you! Just add whatever toppings you like to your favorite tortilla chips and you have an easy dinner for a busy week night or quick meal prep idea. Once you try these chicken nachos, you may not be able to stop eating them!

INGREDIENTS

  • Blue Corn tortilla chips

  • 1 c shredded chicken

  • 1/2 c roasted red, yellow peppers and onions mix (Trader Joe’s)

  • 1/2 c fire roasted corn

  • 1/2 c chickpeas (rinsed and dried)

  • 1/2 c shredded mozzarella cheese

  • 1/4 tsp cumin

  • 1/4 tsp dried cilantro

  • 1/4 tsp red pepper flakes

  • 1 tsp green dragon sauce (Trader Joe’s)

PREPARATION

  1. Preheat oven to 425 F.

  2. Heat peppers and onions and corn in microwave until thawed.

  3. Drain excess water and pat dry.

  4. Place chips on a baking sheet and top with remaining ingredients.

  5. Bake in oven for about 10 minutes until cheese has melted.
