Pesto Rosso Gnocchi

Gnocchi is an Italy food and is a soft and pillowy potato dumpling. In this recipe, baking the gnocchi gives it a crispy outside that makes it even better! The pesto is a red based sauce and added with cream cheese gives the gnocchi a creamy, delicious addition. Enjoy this easy and comforting dish for dinner or make ahead for a quick meal prep.

INGREDIENTS

  • 1 package gnocchi (Trader Joe's)

  • 1 package cherry tomatoes

  • 4 garlic cloves

  • 1 tbsp olive oil

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • 1/2 tsp crushed red pepper flakes

  • 1 tsp pepper

  • 1 tsp dried thyme

  • 2 tbsp light cream cheese (softened to room temp)

  • 2 tbsp Pesto Rosso (Trader Joe's)

PREPARATION

  1. Preheat oven to 425 F.

  2. Add gnocchi, tomatoes, garlic, seasonings, and olive oil to sheet pan.

  3. Cook in oven for 15 minutes.

  4. Once all has cooked, spoon into a large bowl and add cream cheese and pesto rosso.

  5. Top with extra basil and enjoy!
