Beef + Broccoli

Beef and broccoli is one of my husband’s favorite dishes. This lighter version is just as tasty as take-out and you can feel better knowing this meal prep is a lot healthier! Just cook everything in one pan and divide into meal prep containers or enjoy for a healthy take-out dinner!

MACROS (per serving) CAL 350 PROTEIN 23 g FAT 14 g CARBS 29 g

INGREDIENTS

  • 1 lb thinly shaved beef

  • 1 tsp olive oil

  • 1.5 c broccoli florets

  • 1/4 c coconut aminos

  • 1 tbsp coconut aminos + 1 tsp arrowroot powder (stir together in a separate bowl)

  • 1 tsp pepper

  • 1/4 tsp salt

  • 1 tsp red pepper flakes

  • 1 tsp onion powder

  • 1 c jasmine rice (cooked)

PREPARATION

  1. Heat sauté pan to high heat and add olive oil.

  2. Once pan is hot, add beef.

  3. Cook beef about 5 minutes, then add broccoli.

  4. Now add coconut aminos, seasonings, and stir well.

  5. Cook for about 2 more minutes, then add coconut aminos + arrowroot powder mixture.

  6. This should create a sauce and will thicken.

  7. Cook for another 2 minutes and take off heat.

  8. Add rice evenly to meal prep containers and top with beef and broccoli.
