Roasted Turmeric Chicken Salad

Turmeric is a bright, yellow spice found in a majority of curries. It has many benefits, such as aiding in inflammation relief, helps with skin conditions, depression, and many others. This spice is full of flavor and this Roasted Turmeric Chicken Salad is no exception. I have always loved chicken salad and this is a flavorful spin on a traditional southern chicken salad that I grew up eating.

INGREDIENTS

  • 2, 4 oz boneless, skinless chicken breasts

  • 1 tsp olive oil

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1 tsp ground turmeric

  • 1 tbsp golden raisins

  • 1 tsp slivered almonds

  • 1/2 c Primal Kitchen Avocado Mayo

  • golden raisins, slivered almonds, and dried dill for topping

PREPARATION

  1. Preheat oven to 375 F.

  2. Coat chicken in olive oil and seasonings.

  3. Bake in oven for around 20 minutes or until internal temperature of chicken reaches at least 165 F.

  4. Let chicken cool and dice.

  5. Add chicken to a large bowl, and add raisins, almonds, and mayo and mix well.

  6. Top with extra raisins, almonds, and sprinkle on dried dill.
