Cheesy Stuffed Sweet Potatoes

Sweet potatoes are full of good for you vitamins and minerals. These cheesy sweet potatoes are super easy to make and are a perfect mid-day treat to help with hunger. Added spinach also gives this prep an extra boost of important vitamins and minerals such as iron, calcium, and folic acid.

Sweet potatoes do not have to be boring. I drizzled Mike’s Hot Honey on top to add extra flavor and some spice. Enjoy!

INGREDIENTS

  • 2 sweet potatoes, cooked

  • 1 c spinach

  • 1/2 c mozzarella cheese

  • 2 tsp parmesan cheese

  • Mike’s Hot Honey

  • dried parsley

PREPARATION

  1. Preheat oven to 425 F.

  2. Slice sweet potatoes in half and place on an oven safe sheet pan.

  3. Evenly divide spinach and place on top of sweet potatoes.

  4. Top with mozzarella and parmesan.

  5. Place potatoes in oven for about 12 minutes or until cheese is melted and crispy.

  6. Remove from oven and top with parsley and drizzle hot honey on top.
