Chicken Sausage and Veggie Pasta

Pasta is one of my favorites and this Chicken Sausage and Veggie Pasta recipe is a healthy and easy meal prep for pasta lovers. This recipe is SIX ingredients! Just cook the pasta, roast the veggies and sausage, pour in the dressing, then toss. If you are short on time but want a delicious and healthy meal prep for the week, this is perfect.

Penne pasta, chicken sausage, broccolini, cherry tomatoes, Greek dressing, and mozzarella.

INGREDIENTS

  • 3/4 bag penne pasta

  • 1 package chicken sausage

  • 1 carton plum tomatoes, sliced

  • 1 package broccolini

  • 1/2 tsp salt & pepper

  • olive oil

  • 1/2 bottle Italian dressing

  • 1/2 package mozzarella cheese slices

 

PREPARATION

  1. Preheat oven to 475 F.

  2. Cook pasta according to package and once cooked, drain excess water.

  3. Add tomatoes, sausage, broccolini, olive oil, salt, and pepper to a sheet pan.

  4. Bake in oven for 20 minutes.

  5. In a large bowl, stir together pasta, tomatoes, sausage, broccolini, mozzarella, dressing, and any spices you like. I used dried oregano and dried basil.

  6. Add to meal prep containers and enjoy!
