Dill Chicken Salad
Chicken salad is always a great lunch option for meal preps, but some can be loaded with fat or just plain. This DILL CHICKEN SALAD is FULL of protein from roasted chicken breasts and LOADED with flavor and crunch! Add this prep to your lunch routine and you will definitely be excited for lunchtime!

INGREDIENTS
DILL CHICKEN
4 boneless, skinless chicken breasts
2 tbsp dried dill
Olive oil spray
SALAD
1/2 c red onion, diced
2 tsp dried parsley
1 tsp sea salt
1 small honey crisp apple, diced
1/2 c slivered almonds
1/2 c avocado mayo
1/2 c fat free Greek yogurt
PREPARATION
Preheat oven to 375 F.
Add chicken breasts to an oven safe sheet pan.
Spray with olive oil and sprinkle dill evenly on each.
Place pan in oven and bake for about 20-25 minutes or until chicken reaches 165 F.
Once chicken has cooked, remove from oven and allow to cool for about 10 minutes.
While chicken cools, add salad ingredients to a large bowl.
Once chicken has cooled, dice and add to bowl and combine all ingredients.
Top with extra onions and almonds if preferred.
