Harissa Chicken + Saffron Rice

Harissa paste is usually made with red chilis, garlic, oil, and vinegar or lemon juice and is found mainly in Middle Eastern and North African areas. It is spicy and it is the perfect compliment to chicken. This Harissa Chicken + Saffron Rice meal prep recipe is easy to make and will take out the boring from traditional chicken and rice meal prep options. INGREDIENTS

  • 2, 4 oz boneless, skinless chicken breasts

  • 1 tbsp Trader Joe's Harissa Paste

  • 1 squash, sliced

  • 1 zucchini, sliced

  • 1/2 tsp dried basil & oregano

  • 1/4 tsp salt & pepper

  • 1/2 tsp olive oil

  • 1/4 c Jasmine Rice (dry—> yields around 1 c cooked)

  • 8 oz Bonafide Be Well Lemon, Mint, & Ginger Bone Broth

  • 4 saffron threads

  • 1 tsp dried parsley

PREPARATION

  1. Coat chicken breast with harissa paste and marinate for at least 10 minutes.

  2. Preheat oven to 425 F.

  3. Spread squash, zucchini, basil, oregano, salt, and pepper on a lined baking sheet.

  4. Drizzle with olive oil.

  5. Bake in oven for 20 minutes.

  6. While vegetables are roasting, add rice, broth, and saffron to Instant Pot.

  7. Cook on rice setting for 12 minutes.

  8. While vegetables and rice cook, grill chicken until internal temperature reaches at least 165 F.

  9. Once rice is cooked, add 1/2 c to each meal prep container and top with parsley.

  10. Slice chicken and add chicken and vegetables on top of rice. Enjoy!!
