Harissa Chicken Kabobs

 
 
 

Grilled or oven baked kabobs are an absolute favorite of mine since I was little. My mom would make kabobs with chicken and vegetables and grill. These harissa chicken kabobs are sweet and spicy and perfect for a delicious dinner idea or make ahead meal prep for the week. The creamy sweet potato hummus helps calm the spicy heat of the harissa and pickled onions give a crunchy bite. Roasted zucchini is a perfect and healthy side dish.

Time: Overnight + 25 MIN

Serves: 6


PREPARATION

1. Rinse and dry chicken breasts and cut into bite sized pieces.

2. Add chicken to a Ziplock bag and add Harissa paste. Marinate overnight.

3. Once chicken has marinated, preheat oven to 425 F.

4. Add sliced zucchini to a lined baking sheet and add oregano and olive oil.

5. Place chicken on skewers and add to another lined baking sheet.

6. Place zucchini on top oven rack and chicken on bottom rack. Cook for 20 minutes.

7. Place all hummus ingredients (except ice water) in a food processor, slowly add ice water, and blend until smooth.

8. Top zucchini with pickled onions.

INGREDIENTS

Chicken

  • 4 boneless, skinless chicken breasts

  • 1/2 jar Trader Joe’s Harissa Hot Chili Pepper Paste

Sides

  • 2 zucchini, sliced

  • 1 tsp oregano

  • 1 tsp olive oil

  • pickled onions

Hummus

  • 1 small sweet potato, cooked

  • 3/4 can garbanzo beans, rinsed & drained

  • 1 tbsp Tahini paste

  • 1 tsp olive oil

  • 1 garlic clove, chopped

  • 1/2 c ice water

  • 1 tsp salt

  • juice from 1/2 lemon
