Pasta Primavera
Pasta has always been one of my favorite foods to eat! This pasta primavera with chicken is super easy to make and tastes oh so yummy! Pastas are a great meal prep idea since you can make a lot and add to individual meal prep containers. This pasta primavera recipe is sure to keep you full throughout the day. Enjoy!!
INGREDIENTS
1 c shredded chicken breast
1 squash, diced
2 Roma tomatoes, diced
3 radishes, sliced
1 package Trader Joe's asparagus sauté
1/2 box penne pasta
1/2 jar Primal Kitchens garlic alfredo
1/2 tsp dried basil & oregano
1/4 tsp salt & pepper
1/2 tsp olive oil
1 lemon wedge
PREPARATION
Preheat oven to 425 F.
Spread vegetables and seasonings on a lined baking sheet.
Cook vegetables for about 20-25 minutes.
While vegetables are roasting, cook penne according to box directions, drain & rinse.
Toss penne, vegetables, chicken, and alfredo sauce in a large bowl.
Sprinkle with grated parmesan and a squeeze of lemon juice.
