Squash Casserole

There is nothing like comfort food in the south. This Squash Casserole is not only a delicious comfort food, but this version is a “healthier” recipe that you don’t have to feel guilty about eating. Make this casserole for an easy dinner or make ahead and add to meal prep containers for a healthy comfort food for the week.

INGREDIENTS

  • 6 yellow squash

  • 1 c Greek yogurt

  • 1 c cheddar cheese, shredded

  • 1/2 c parmesan cheese, shredded

  • 2 packs Ritz crackers, crumbled

  • 1 tsp paprika

  • 1 tsp dried parsley

  • 1 tsp onion powder

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1/4 c olive oil

  • olive oil spray

PREPARATION

  1. Preheat oven to 425 F.

  2. Wash and dry squash and slice into bite sized pieces.

  3. Heat saute pan on med-high heat and add olive oil. Add squash to pan and cook until tender, about 8 minutes.

  4. Once squash is tender, add cheese, half of seasonings, half of crackers, and yogurt to pan and mix well.

  5. Add mixture to baking dish and top with crackers and remaining seasonings.

  6. Spray casserole with olive oil spray.

  7. Bake in oven for about 10 minutes. Enjoy!
