Roasted Chickpeas + Kale Bowl

Roasted chickpeas is one of my absolute favorite things to eat. They are crispy and crunchy and full of warm flavor. Add a hint of chili seasoning and drizzle of lemon juice on top and they are a perfect snack. This roasted chickpeas kale bowl is full of flavor and you will never know it is good for you.

INGREDIENTS

  • 1 can chickpeas, rinsed & drained

  • 1 tbsp feta

  • 1 c cherry tomatoes, sliced

  • 1 tbsp tamarindo sauce

  • 1.5 c baby kale

  • 1 tbsp kalamata olives, sliced

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • 1 tsp olive oil

PREPARATION

  1. Preheat air fryer to 400 F.

  2. Add chickpeas, tomatoes, seasonings, and olive oil to bowl and coat well.

  3. Once air fryer has heated, add bowl ingredients and cook for 8 minutes.

  4. Add kale to bowl, then toss chickpeas and tomatoes on top.

  5. Sprinkle with feta and kalamata olives, then drizzle with tamarindo sauce.
