Chimichurri Chicken, Hummus, & Naan

INGREDIENTS

  • 2, 4 oz boneless, skinless chicken breasts

  • 1/2 c chimichurri sauce (save 2 tsp for topping)

  • 1/4 tsp salt & pepper

  • 1 tsp kalamata olives

  • 1 tsp feta

  • 2, 2.5 oz single serve hummus cups

  • 1 piece Naan bread

  • 2 lemon wedges

PREPARATION

  1. Add chicken, chimichurri, and salt and pepper to Instant Pot and cook on meat/stew setting for 25 minutes.

  2. Once chicken has cooked, take out and shred.

  3. Add half of chicken to one meal prep container and the other half to another container.

  4. Top chicken with extra chimichurri, feta, and olives.

  5. Add hummus and Naan to meal prep containers. Enjoy!
