Salsa Verde Chicken Stuffed Avocados

Salsa Verde Chicken Stuffed Avocados, yes please! If you love avocados, this is a muy delicioso treat! Creamy avocados are topped with salsa verde ground chicken, pico, cotija, and more salsa verde. These stuffed avocados are perfect for a quick lunch or dinner or meal prep for a couple days!

Serves: 4 (yields 8 halves, 2 halves = 1 serving)

INGREDIENTS

  • 4 mini avocados, sliced in half (seeds removed)

  • 1/2 c panko breadcrumbs

  • coconut spray

Chicken Mixture

  • 1/2 lb ground chicken

  • 1/2 c salsa verde

  • 1 tsp ancho chili powder

  • 1/2 tsp sea salt

  • 1/2 red bell pepper, diced

  • cotija cheese and pico de gallo

PREPARATION

  1. Preheat oven to 425 F. Heat sauté pan to med-high heat.

  2. Add chicken to hot sauté pan and cook until browned.

  3. Add remaining chicken mixture ingredients to pan.

  4. Turn off heat.

  5. Scoop avocados out of shells and spray each half with coconut spray (be careful not to break avocados).

  6. Bread each avocado in bread crumbs and place on sheet pan.

  7. Top each avocado half with chicken mixture and sprinkle with cotija.

  8. Bake in oven for about 8 minutes or until cheese is melted.

  9. Once avocados are done, top with toppings. Enjoy! (if making for meal prep, squeeze lemon juice on avocados to help from browning)
