Spicy Chicken Sausage Jambalaya

This jambalaya recipe is super easy and fast so you are sure to have an amazing meal prep idea with this one! I used my Instant Pot and had a delicious meal in no time. Spicy chicken sausage and soft jasmine rice make this recipe a perfect healthy comfort food meal prep. If you don’t like spice, just use any chicken sausage without the spice. Enjoy!

PREPARATION

  1. Heat sauté pan on med-high heat and add olive oil.

  2. Once pan is hot, add sausage, onions, garlic, and seasonings.

  3. Sauté ingredients until sausage is crispy and onions are soft.

  4. Add those ingredients to Instant pot, then add remaining ingredients.

  5. Stir until all are combined.

  6. Turn Instant Pot on rice setting (around 12 minutes) and cook.

  7. Once able to, open Instant Pot and stir.

  8. Add jambalaya to a bowl and top with parsley.

INGREDIENTS

  • 2 packages spicy chicken sausage

  • 1 c white onions, chopped

  • 3 garlic cloves, diced

  • 1 tbsp olive oil

  • 1 tsp chili powder

  • 1 tsp onion powder

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp paprika

  • 1 c Jasmine rice (dry —> yields around 3 c cooked)

  • 1/4 c pimentos

  • 2 c Kettle & Fire Chicken Bone Broth

  • 1 c crushed tomatoes

  • parsley for topping
