Sweet Potato Fajita Bowls

Sweet potatoes are are an excellent source of Vitamins C and A, which are essential to immune health. They also contain fiber and other essential nutrients. They have a high fiber content which make them a slow burning starch and are lower on the Glycemic Index. Sweet potatoes are less likely to cause blood sugar spikes because of this. These Sweet Potato Fajita Bowls are an easy and flavorful idea to add to your meal prep routine and will keep you full. Add in some shredded chicken for extra protein and you are all set!

INGREDIENTS

  • 2 sweet potatoes, diced

  • 1 yellow squash

  • 1 zucchini squash

  • 1/2 package Fire Roasted Peppers & Onions (Trader Joe’s)

  • 1 package white mushrooms, sliced

  • olive oil

  • 1 tsp chili powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1 tsp dried cilantro

  • 1 tsp red chili pepper flakes

  • 1 tsp sea salt

  • 1/2 c salsa verde

  • 1/2 c pico de gallo

  • 1 tbsp Jalapeño Sauce (Trader Joe’s)

  • pickled red onions

DIRECTIONS

  1. Preheat oven to 425 F.

  2. Place sweet potatoes on sheet pan, toss with olive oil and chili powder, and roast in oven for about 20 minutes.

  3. While sweet potatoes are roasting, add veggies to another sheet pan and add all remaining seasonings.

  4. Cook veggies for 15 minutes.

  5. Once everything has cooked, add sweet potatoes to a meal prep container and top with veggies.

  6. Top with salsa verde, pico, and jalapeño sauce. Add red onions. Enjoy!!
