Turemeric Chicken Noodle Soup

Chicken noodle soup is a favorite of mine and always makes me feel good when I eat it. This Turmeric Chicken Noodle Soup is loaded with good for you foods like turmeric, ginger, carrots, and herbs. Make this savory soup as a lunch or dinner for a busy night or make ahead and have soup for meal preps for the week.

INGREDIENTS

  • 4 boneless, skinless chicken breasts

  • 2 c water

  • 2 frozen ginger cubes

  • 1 tsp dried thyme

  • 1 tsp turmeric

  • 1 tsp sea salt

  • 1 tsp cracked black pepper

  • 1 tsp ground sage

  • 1 tsp dried cilantro

  • 1 tbsp Irish butter

  • 1 tbsp olive oil

  • 1.5 c snack size carrots

  • 1/2 white onion

  • 2 garlic cloves

  • 2, 8 oz packages Healthy Noodle by Kibun (water drained)

  • 1 tsp dried cilantro for topping

PREPARATION

  1. Add first 11 ingredients to an Instant Pot and cook on meat/stew setting for 35 minutes or until chicken is shredded.

  2. While chicken cooks, chop onion, garlic, and carrots.

  3. Add veggies and cook in Instant Pot for additional 10 minutes on meat/stew setting.

  4. Once all has cooked, add noodles and stir soup. Add to bowl and top with dried cilantro.
