Pineapple Chicken

Chicken is a staple to me when I meal prep. If you are used to the same old bland chicken for your meal preps and want a nice change, this Pineapple Chicken is a great recipe! This prep is loaded with protein that is sure to keep you full and help you hit your daily protein goal while being full of flavor at the same time. I added couscous and roasted green beans to this prep and had a delicious and easy prep in no time.

INGREDIENTS

  • 4 boneless, skinless chicken breasts

  • 1 tbsp olive oil

  • 1 c pineapple juice

  • 1 tsp dried thyme

  • 1 tsp dried oregano

  • 1 tsp cracked black pepper

  • 1/2 tsp sea salt

  • 1 c pineapple chunks

PREPARATION

  1. Place chicken in Ziplock bag and add seasonings and pineapple juice.

  2. Let marinate at least 20 minutes. Preheat oven to 425 F.

  3. Once chicken has marinated, place on a sheet pan and add pineapple chunks around chicken.

  4. Bake in oven for 20-25 minutes or until internal temperature has reached 165 F.

  5. Take chicken out of oven and allow to cool for at least 5 minutes.

  6. Once cooled, slice chicken. Enjoy!!
