Chicken and Peppers
Looking for an easy and quick meal prep? This Chicken and Peppers recipe is super easy to prep. I added spaghetti squash to mine but rice or potatoes can be added, or simply eat just the chicken and peppers. Adding 1 cup of roasted spaghetti squash will add around 80 calories, 1 g of protein, 10 g of carbs, and 5 g of fat. This prep can be made in under 15 minutes and you will have preps for a few days. Enjoy!

INGREDIENTS:
6 red bell peppers
1 lb ground chicken
2 c fresh spinach
1 c mozzarella cheese, shredded
1 tbsp olive oil
salt and pepper to taste
1/4 c water
PREPARATION:
Thinly slice peppers after washing and removing seeds.
Heat sauté pan on med-high heat.
Add olive oil to pan and let it get hot.
Add peppers and let cook for about 5 minutes.
Add ground chicken and cook another 3 minutes or until browned.
Add salt and pepper to taste then add water and let peppers simmer.
Add in spinach and cook until wilted then top with cheese.
Serve with spaghetti squash, rice, or eat just the chicken and peppers.
