Chipotle Chicken Burrito Bowl

INGREDIENTS

2, 4 oz boneless, skinless chicken breasts

MARINADE

  • 1/4 c Greek yogurt

  • 1 chipotle in adobo

  • 1/2 tsp cumin

  • 1/4 tsp salt and pepper

  • 1/2 tsp paprika

  • 1/2 tsp dried cilantro

  • juice of 1 lime

TOPPINGS/SIDES

  • 1.5 c rice, cooked (brown or white)

  • 1 c black beans, drained

  • shredded cheddar cheese

  • creamy Jalapeño sauce

  • dried cilantro

PREPARATION

  1. Add all marinade ingredients to a blender and blend until smooth.

  2. Add chicken to a Ziplock bag and pour marinade on top.

  3. Place bag in fridge for about 30 minutes.

  4. Cook chicken on the grill for about 20 minutes or until internal temp reaches 165 F.

  5. If cooking chicken in the oven, preheat oven to 375 F and cook chicken for about 25 minutes or until internal temperature reaches 165 F.

  6. Allow chicken to cool and chop into bite sized pieces.

  7. Evenly divide rice, beans, and creamy jalapeño sauce and add toppings to meal prep containers.
