Taco Quinoa Bowl

Love tacos but want a lightened version with this TACO QUINOA BOWL? This prep is easy to assemble and will keep you full for hours. Top your taco bowl with these toppings, especially Siete’s Creamy jalapeño Sauce, and you will want a Taco Quinoa Bowl every prep!

INGREDIENTS:

  • 2 c lettuce, shredded

  • 1 c quinoa, cooked

  • 1 & 1/2 c taco meat (directions below)

  • 1/2 avocado, sliced

  • 1 tsp black olives

  • 1 tbsp Cotija, grated

  • 2 tsp Siete Creamy Jalapeño Sauce

  • jalapeños for topping

  • dried cilantro for topping

TACO MEAT

  • 1/2 lb ground sirloin

  • 2 tbsp taco seasoning

  • 1, 4.5 oz can green chilis

  • 1/2 c fiesta corn (can or frozen)

PREPARATION:

  1. Preheat sauté pan to med-high heat.

  2. Add 1/2 lb of ground sirloin to pan and cook until browned.

  3. Once cooked, drain excess fat.

  4. Add seasoning, chilis, and corn and combine.

  5. Once ready to assemble meal preps, evenly divide lettuce and add to containers.

  6. Next, add even amount of quinoa.

  7. Now add 3/4 c of beef to each.

  8. Top with avocado, olives, Cotija, jalapeños, sauce, and cilantro.
