Grinder Salad
Love salads for meal prep but getting bored of the same salads? This GRINDER SALAD is full of tangy flavor and is sure to change up your salad prep routine. I used brussels sprouts as my salad base for this prep and made a yummy sauce to pour on top. Enjoy!

INGREDIENTS:
GRINDER PREP
2 c shaved brussels
1/4 red onion, sliced
1/4 c banana peppers, sliced
1/4 c cherry tomatoes, sliced
1/4 c roasted red peppers, sliced
1/4 c kalamata olives, sliced
1 c pepperonis, sliced
GRINDER SAUCE
1/4 c apple cider vinegar
1/2 c avocado mayo
1 tsp dried basil
1 tsp black pepper
1/2 tsp sea salt
PREPARATION
Add sauce ingredients to a bowl and stir until combined and set aside.
Evenly divide and add brussels sprouts to two meal prep containers.
Evenly divide remaining ingredients and add to each prep container.
Pour half of sauce on one bowl and repeat.
