Huevos Rancheros Breakfast Bowl

This Huevos Ranchers Breakfast Bowl is sure to fuel your body in the mornings and keep you full! This breakfast bowl is full of flavor and surely not another boring breakfast meal prep. Blue corn grits are so tasty and adds a little color to the bowl. Enjoy!!

INGREDIENTS

  • 1 c blue corn grits

  • 8 oz liquid egg whites

  • 1 tsp olive oil

  • 1/2 can black beans, rinsed & drained

  • 1 tsp salsa verde

  • 1/2 tsp dried cilantro

  • pickled red onions

  • shredded mozzarella

PREPARATION

  1. Cook grits according to package and set aside once cooked.

  2. Heat sauté pan to medium heat and add olive oil and eggs.

  3. Spoon grits into a bowl and top with egg whites.

  4. Add black beans to sauté pan and warm through, slowly mash beans.

  5. Once beans are warmed, add to eggs and grits.

  6. Top with pickled onions, cheese, cilantro and salsa verde.
