Sweet And Sour Chicken

Sweet and Sour Chicken is a favorite of mine and this version is not only full of sweet and spicy flavor, but good for you! If you want less carbs, just use cauliflower rice instead.

INGREDIENTS

  • 2, 4 oz boneless, skinless chicken breasts

  • 1 tsp olive oil

  • 1/2 jar Sweet Chili Sauce (Trader Joe’s)

  • 1 red bell pepper, diced

  • 3 garlic cloves, diced

  • 1 tsp EBTB seasoning

PREPARATION

  1. Preheat sauté pan to high heat.

  2. Dice chicken and set aside.

  3. Drizzle olive oil in pan and once hot, add in diced garlic and bell peppers.

  4. Cook for about 1 minute.

  5. Toss chicken in pan and cook for about 5 minutes.

  6. Add chili sauce and cook chicken until crispy and sauce has thickened. (Chicken should reach 165 F)

  7. Add chicken to meal prep container with Jasmine rice and top with EBTB seasoning.
