Veggie Stuffed Sweet Potatoes

 
 
 

Sweet potatoes are loaded with vitamins such as potassium, vitamins A, B, & C, and have many beneficial properties. Potassium rich sweet potatoes can help lower blood pressure levels since potassium is important in helping maintain a healthy cardiovascular system. They also contain fiber which can help improve insulin sensitivity in diabetes as well as help maintain a healthy digestive tract.

INGREDIENTS

  • 1 sweet potato

  • 1 c garbanzo beans

  • 1 red bell pepper

  • 1 c chopped spinach

  • 2 tsp olive oil

  • 1 tsp grated parmesan

  • 1/2 tsp chili powder

  • 1/2 tsp red pepper flakes

 

PREPARATION

1. Preheat oven on bake to 425 F.

2. Wash and cook sweet potato in microwave for about 3 minutes or until done.

3. Add olive oil to saute pan and add spinach, cook until wilted.

4. Rinse and dry garbanzo beans and place on lined baking sheet.

5. Slice red pepper and add to pan, along with seasonings.

6. Cook veggies on 425 F for about 10 minutes.

7. Cut sweet potato in half and add spinach, garbanzo beans, and peppers.

8. Top with parmesan cheese and enjoy!!
